Assuming you haven't changed things to much from the basic RTCW:ET install, you begin recording a demo by pressing F12, and stop the recording by either pressing the F12 again, letting it run to the end of the map/game, or going into console(~ <-key) and typing /stoprecord.
Demos will be found on your computer(os:windows) here:
(assuming you allowed the game to install to default path)
C:\Program Files\Wolfenstein - Enemy Territory\etmain\demos
Your demos will be in the etmain/demos folder from the most basic servers. If you record a demo on an etpub server, etpro, or ect server, your demo will be in the etpub/demo or no quarter/demo or whatever mod you were playing when it was recorded folder.
I've read that some people have problems with recording or watching demos made on j-mod servers, and in my own experience, on No Quarter servers. I haven't tested the j-mod issue, and I have no idea how to fix the No Quarter.
Demos made in et 2.55 have a .dm_82 suffix
Demos made in 2.56 (not popular, may never be an issue) I think are .dm_83
Demos made in 2.60 are .dm_84
You should be able to watch most in whatever version if you simply change the number to fit your game version.
You may need the particular map the demo was made in. Somehow I've been lucky enough to always already have the map, so its not come up as a problem for me yet. :)

The best, fastest, simplest windows video editer I've ever touched is the completely free http://www.virtualdub.org/download
Add to that, the best codec/compression that is also free and most trouble free would be http://www.xvidmovies.com/codec/
Simply put, making 30 seconds of video at 800x600 with fraps will take up aprox 233 MB. Reloading this into virtual dub, setting the compression to xvid, adjusting the compression/target bitrate to around 4000kbs should reduce the space your file takes down to 40-60MB Further adjustments once you've figured out what your adding, and or taking out and bringing that target bitrate down to 1500-2000 will reduce that space even more.

I'd add info on creating(oops-edt*converting already made avi files) wmv files, but I hate the windows MovieMaker, and what I do sometimes use came with my tv tuner card.
I just took a look, and apparently MicroWaft :P has it up as a free download.

I'm not sure, that might work. Actually, I found and have been using this little script I keep in my .cfg that starts and stops it with one key.

What's the file name of the demo?
We can tell by the extension which
version of ET you need.
You may also have to load a mod.
